Vanilla Ice Cream

This is a quick ice cream recipe (made without cooking) the kids often use when they’re in a hurry to have a tasty treat! 2    eggs 1 cup honey 2-3/4 cups whole milk 1 Tablespoon pure vanilla extract 1 cup cream In a large bowl, beat eggs until thick and lemon colored.    Beat in honey.  Stir in milk, cream and vanilla.    Pour into ice cream canister.   Freeze in ice cream maker according to manufacturer’s directions.   Makes about 2 quarts.

We live on a small family farm located in S.W. Minnesota, near the South Dakota border. The source of our honey is from white and red clover. The honey appears as liquid gold in color. Our honey is extracted using a hand cranked centrifugal force extractor. Then the honey is screened once into a holding container from which we later fill the small honey bottles. We do not heat treat the honey nor add any other ingredients. Pure and natural is our Minnesota honey! What could taste better?

    • It tastes great too. After reading the label on the “natural” ice cream we bought yesterday………..I’m realizing it’s always going to have to be homemade, time allowing of course:)
      Can’t believe the stuff I’m reading on labels lately. Everybody should read he labels on your purchased food items.
