Whole wheat honey pancakes

The following recipe is tried and true.  A real hit with my family.  I use freshly ground Prairie Gold Wheat Montana which is very light in color.

2 cups whole wheat flour

6 tsp. aluminum free baking powder

1 tsp. salt

2 eggs beaten

2 T. honey

4 T. vegetable oil

2 cups milk

Mix dry ingredients together in a bowl and set aside.  Mix eggs, honey, oil and milk.  Add to the dry ingredients and stir until just blended.  Bake on a  hot buttered griddle.  Serve at once with a pat of butter drizzled with honey.

Note:  They will rise in the bowl so try to make sure the family is around to eat them immediately:)   The Wheat Montana is the best tasting flour that I have used so far.  I will be testing out another one of their wheat berries soon and will let you know how that tastes.

Fire up the pizza oven in a blizzard!

Some may have heard it said that Minnesota is no place for the weak!  You have to be able to take sub-zero temps often and lots of the fluffy white stuff.  Today it has been snowing heavily non-stop.   It is supposed to continue into tomorrow.  Luckily the wind won’t start until later this evening.  Since today Mario turned 6 years old, we all decided a pizza cook out would make it extra special.  Plus it always helps us to remember how warm it was in Minnesota and how we actually do receive summer at some point.

I made up ciabatta dough at 2:00 p.m. and the pizza is all ready to go in the oven at just short of 5:00 p.m.  You’ve got to love that recipe.  My 11-year-old Caleb has the fire roaring out there but we await the guests who just drove in commenting, “Holy smokes, you can’t even see the road.”  We are protected by the grove of pines so it seems better out than it actually is.  As always though it is so nice to be able to spend these special days surrounded by family.  My son-in-law should be able to make it soon and then the party will begin!

The bees were still alive this morning when Marisa checked them but we are anticipating more severe cold weather.  One can only pray and if they do not make it we will fill them with new packaged bees.  Our new order is being mailed tomorrow for a quite a few of the  3 pound package bees.  Marisa has decided on a mix of Italian and Minnesota Hygienic bees for this season.  It is a large order so we will need to make sure it is in the mail tomorrow.  This  could be a problem considering the mailman barely made it through today.

For now we continue to enjoy our lives, count our blessings and dream of the spring that, no doubt, will eventually arrive!

Callens Family Honey Farm

We live on a small family farm located in S.W. Minnesota, near the South Dakota border.  The source of our honey is from white and red clover.  The honey appears as liquid gold in color.  Our honey is extracted using a hand cranked centrifugal force extractor.
The honey is screened once into a holding container from which we later fill the small honey bottles.  We do not heat treat the honey nor add any other ingredients.  Pure and natural is our Minnesota honey!  What could taste better?

We sell raw, all natural, unpasteurized, liquid gold honey straight from the hive.
Looks great and tastes even better!

Happy New Year!

Nothing seems to change in Minnesota.  Once again we are ringing in the new year with yet another snow storm!!  It is a lovely sight to behold, that is if you don’t have to do chores in it.   The bees are in their winter cluster trying to beat all odds and survive the cold winter.
So far, so good!  They are in Gods strong hands.  Out and about on the rest of the farm the animals are surviving underneath this new blanket of snow.   Most of the livestock are eating more than is usual for them to keep up their heat and energy.
In the house there is freshly baked Ciabatta bread to snack on  with our own honey and butter.
The wood stove is going strong and preparations are being made for a party that will bring in the new year  with a bang!
Being surrounded by the ones you love is a  blessing that can only be described as wonderful.
A Happy New Year to one and all from all of us on the Callens Farm.
